The Hernández family are veterans at growing and harvesting excellent-quality coffee. The Typica variety is representative of all the quintessential qualities of Arabica — brightness, delicate aromatics, and sweetness. This lot is thermally shocked then depulped in a way that retains as much juice as possible in which the coffee ferments for seven days. The coffee is then inoculated with yeasts from the same variety, leading to a bright and tropical flavour profile.
