La Macarena is another farm belonging to Wilton Benitez. After cherry sterilization, this lot of Red Bourbon was inoculated with the yeast saccharomyces pastorianus. After this full-cherry fermentation, the coffee is pulped and fermented a second time with the coffee’s mucilage.
